BBQ Spiced Skirt Steak Tacos

Ingredients 

  • 1.5 lbs. of skirt or flank steak 

  • 1 tablespoon olive oil 

  • 1 teaspoon lime juice 

  • Salt as needed 

  • 8 small corn or flour tortillas 

  • Mexican cheese blend 

  • Fine diced white onion 

  • Cilantro 

  • Spicy mayo 

  • Back Rolls BBQ Blend 

Recipe 

  • Marinate steak, rub with oil and back rolls bbq blend, lime juice and salt. Let rest 30 minutes at room temp. 

  • Heat grill or cast iron pan to high

  • Cook steak 3-4 minutes each side

  • Rest for 5 – 10 minutes, then slice against grain 

  • Warm the tortillas 

  • Assemble with steak, cheese, onion, cilantro and spicy mayo

  • Serve
